Grilled Salmon with Kansas City BBQ Rub

Ingredients

  • 4 salmon fillets (6 ounces each), skin on

  • 1 tablespoon olive oil

  • 2 tablespoons Revolution Barbecue Kansas City BBQ Rub

  • 1 lemon, cut into wedges

  • Optional garnish: chopped parsley or green onions (scallions)

Directions

  1. Pat the salmon fillets dry with a paper towel. Brush each fillet with olive oil, then season generously with Kansas City BBQ Rub, pressing it into the flesh so it sticks. Let the fillets rest at room temperature while you preheat your grill.

  2. Set your grill to medium-high heat (about 400°F). If using charcoal, build a two-zone fire and place the salmon over direct heat. Oil the grates just before placing the fish down.

  3. Place the salmon skin-side down on the grill. Close the lid and cook for 6–8 minutes, depending on thickness. Flip carefully and cook another 2 minutes, just until the internal temperature reaches 125–130°F for medium.

  4. Remove from the grill and let rest for a couple minutes. Squeeze lemon over the top and serve with your favorite sides.
