Directions

Ensure both the brisket trimmings and the meat grinder are really cold. Place the grinder parts in the freezer if possible.
Grind the brisket trimmings in a meat grinder. Start with the larger grind, then run them through a smaller grinder.
Form the ground brisket into 6 equal-sized patties, about ⅓ pound each.
