Smoked Beef Plate Ribs with Fuego Vida Butter
Share
In the world of barbecue, few cuts inspire awe quite like beef plate ribs. Sometimes called “dino ribs” for their massive size, these come from the short plate primal located beneath the ribeye. They carry a rich marbling that melts into the meat during a long, steady smoke, creating an unrivaled depth of flavor. Cooking them low and slow with mesquite wood enhances their natural beefiness with a bold, earthy smokiness. For this recipe, we’ve seasoned the ribs with Revolution Barbecue Texas Beef BBQ Rub, spritzed them with a sweet-and-tangy mixture of Mexican Coke and apple cider vinegar, and finished them with a fiery butter made from our Fuego Vida XXX Hot Seasoning. The result is barbecue that is primal, indulgent, and unforgettable.

Beef plate ribs are the brisket of the bone-in world — a cut that rewards patience with tenderness and flavor that defies description. Smoking them at 250 degrees over mesquite delivers a bark that is smoky, peppery, and rich, while the spritz layers in subtle caramel sweetness and vinegar brightness to keep the meat juicy through the long cook. The finishing touch comes with a compound butter spiked with Revolution Barbecue Fuego Vida XXX Hot Seasoning. Resting the ribs meat side down on this fiery butter allows it to melt into every crevice, enriching the meat with buttery heat and turning each bite into a perfect balance of smoke, spice, and melt-in-your-mouth indulgence.
Ingredients
For the Ribs
- 3 tablespoons Revolution Barbecue Texas Beef BBQ Rub
- 2 tablespoons yellow mustard (binder)
For the Spritz
- 1 cup Mexican Coke (or any cola made with real cane sugar)
- 1/4 cup apple cider vinegar
For the Fuego Vida Butter
- 2 sticks unsalted butter, room temperature
- 1 tablespoon Revolution Barbecue Fuego Vida XXX Hot Seasoning
Directions
- Make the Butter: Allow the butter to come to room temperature. In a bowl, thoroughly mix the softened butter with Fuego Vida XXX Hot Seasoning. Place the mixture on a sheet of cling film, shape into a log, and roll tightly, twisting the ends to seal. Place in the refrigerator until firm.
- Season the Ribs: Trim excess fat and silver skin from the ribs. Rub a thin layer of yellow mustard evenly over the ribs as a binder. Coat thoroughly with Texas Beef BBQ Rub and let them rest at room temperature while the smoker preheats.
- Preheat the Smoker: Set the smoker to 250 degrees using mesquite wood for smoke.
- Smoke the Ribs: Place the ribs bone side down on the smoker. Let them smoke undisturbed for the first 2 hours.
- Spritz the Ribs: At the 2-hour mark, combine the Mexican Coke and apple cider vinegar in a spray bottle. Lightly spritz the ribs. Continue spritzing every hour until the ribs reach an internal temperature of 203 degrees, about 8 to 10 hours.
- Rest the Ribs: Once probe tender, remove the ribs from the smoker. Lay 4 tablespoons of the chilled Fuego Vida butter on butcher paper. Place the ribs meat side down on top of the butter, wrap tightly, and rest in a cooler for 1 to 2 hours.
- Serve: Slice between the bones, with each rib serving as its own portion. Add additional slices of the Fuego Vida butter for extra richness and heat.
