These Sausage and Spinach Lasagna Roll-Ups were born out of a delicious collaboration with my friends at Polidori Sausage, a Colorado company I’ve come to love and respect. Rich, cheesy, and packed with flavor, they’re everything I want in a hearty meal. The sausage does the heavy lifting here—bold, savory, and perfectly seasoned—while the spinach and garlic bring balance. It’s the kind of meal you gather around the table for. Whether it’s a family Sunday dinner or a weeknight craving, this one’s going in the rotation.

These lasagna roll-ups, made withPolidori Italian sausage and bratwurst, are layered with garlicky spinach, melty mozzarella, and your favorite pasta sauce—then baked to bubbly, cheesy perfection. Think of them as comfort food, elevated. Serve ‘em hot, with extra sauce on the side.

Sausage and Spinach Lasagna Roll-Ups with Polidori Sausage

Ingredients

  • 9 sheets lasagna noodles

  • 4 Polidori Italian sausages, casings removed

  • 2 Polidori bratwurst sausages, casings removed

  • 1 tablespoon olive oil

  • 24 ounces frozen spinach

  • 3 garlic cloves, minced

  • 1 1/2 cups mozzarella cheese, grated

  • 1 jar pasta sauce (or homemade if you’re feeling it)

Directions

  1. Bring a large pot of salted water to a boil and cook the lasagna noodles according to the package. Drain and transfer to a bowl of cold water to stop the cooking. Set aside.

  2. In a skillet over medium heat, brown the sausage and bratwurst, breaking it apart as it cooks. Once fully browned, transfer to a bowl and set aside.

  3. In the same skillet, heat olive oil and sauté the garlic until fragrant, then stir in the frozen spinach. Cook until the spinach is defrosted and all the liquid has evaporated. Season with a pinch of salt, then set aside.

  4. Preheat your oven to 350°F. Lightly coat the bottom of a 9x9-inch baking dish with a layer of pasta sauce.

  5. Lay out each lasagna noodle and layer with a spoonful of spinach, sausage, a drizzle of pasta sauce, and a sprinkle of mozzarella. Carefully roll each one up and place vertically into the baking dish.

  6. Pour additional sauce between and over the roll-ups. Cover the dish with foil and bake for 20 minutes. Remove the foil, top with the remaining cheese, and bake another 10 minutes until melted and bubbly.

  7. Let cool for a few minutes, then serve hot. Extra sauce and some garlic bread on the side? Highly recommended.
