This isn’t your grandma’s meatloaf. It’s bold, smoky, and packed with Korean flavor thanks to our Revolution Barbecue Korean BBQ Rub. The funk of chopped kimchi, the heat of gochujang glaze, and the savory power of our rub make this dish unforgettable. It’s comfort food with an international passport.

1 pound 80/20 ground beef
3 garlic cloves, minced
1/2 cup kimchi, finely diced
1 egg
1/2 cup panko bread crumbs
2 teaspoons Revolution Barbecue Korean BBQ Rub

4 tablespoons gochujang chili paste
1 tablespoon water
Directions
Preheat your oven to 350 degrees Fahrenheit. Lightly grease a standard 9x5-inch loaf pan.
In a large bowl, combine the ground beef, garlic, kimchi, egg, panko bread crumbs, and Korean BBQ Rub. Mix by hand until just combined—don’t overwork it.
Transfer the mixture to the loaf pan and shape it evenly, pressing it gently into the corners. Bake uncovered for 35 minutes.
While the loaf bakes, stir together the gochujang and water in a small bowl until smooth.
After 35 minutes, remove the loaf from the oven and spoon the glaze over the top. Increase the oven temperature to 400 degrees Fahrenheit and return the meatloaf to bake for another 10 minutes, until the glaze bubbles and starts to caramelize.
Let rest for 5 to 10 minutes before slicing. Serve hot, garnished with chopped green onions and sesame seeds if desired.
