Carne asada has always been one of those foods that feels bigger than the plate. It carries the smell of hot fire, the sound of meat hitting the grill, and that first bite of sliced skirt steak tucked into a warm tortilla with whatever makes you happy. I have eaten carne asada in enough backyards, taco shops, and roadside setups to know that the best versions are built around good beef, hot coals, and seasoning that respects the meat.

Inside skirt steak is my absolute favorite cut of steak, especially when you get your hands on a prime cut. It has that rich beef flavor, loose grain, and beautiful texture that just eats differently when it is cooked hot and sliced thin across the grain. It gives you char, juice, tenderness, and that little bit of steakhouse chew that makes carne asada so satisfying.

For this version, I brought it through our Revolution Barbecue style with the IncrediBeef combo. Revolution Barbecue Texas Beef BBQ Rub lays down that clean salt, pepper, garlic, onion, and bell pepper foundation, while Revolution Barbecue Blak BBQ Seasoning adds a darker savory edge with black pepper, cumin, garlic, onion, mustard, oregano, and just a touch of honey powder. Together, they build a bold crust without getting in the way of the skirt steak.

Prime inside skirt steak is one of those cuts that reminds me why I love cooking beef over fire. It does not need much fuss. It already has deep flavor, a loose grain, and enough natural richness to stand up to charcoal, hickory, and a serious seasoning profile. When it is cooked hot and sliced properly, it gives you that perfect mix of charred edge, juicy center, and tender bite.

The IncrediBeef combo brings two different sides of beef seasoning together. Revolution Barbecue Texas Beef BBQ Rub gives the skirt steak a clean, peppery, savory base with garlic, onion, and little flecks of bell pepper. Revolution Barbecue Blak BBQ Seasoning brings in a deeper, darker character with earthy spice, black pepper, garlic, onion, oregano, mustard, and a little sweetness from honey powder. That combination works especially well on skirt steak because the grain and surface texture hold onto seasoning beautifully.

The finished carne asada has a smoky aroma, a dark crust, and a rich beefy mouthfeel that works in tacos, burritos, carne asada fries, nachos, or straight off the cutting board.

Charcoal Grilled Carne Asada with Texas Beef and Blak Seasoning

Ingredients

    • 3 pounds prime inside skirt steak

    • 1 tablespoon beef tallow, softened

    • 4 teaspoons Revolution Barbecue Blak BBQ Seasoning

    • 2 tablespoons Revolution Barbecue Texas Beef BBQ Rub,

    • Charcoal, as needed

    • 4 large hickory wood chunks

    Directions

    1. Prepare The Skirt Steak: Pat the skirt steaks dry with paper towels and place them on a clean work surface.
    2. Add The Binder: Lightly coat one side of each skirt steak with a scant amount of softened beef tallow, using only enough to help the seasoning adhere.
    3. Season The First Side: Season one side of each skirt steak with about 1 teaspoon of Revolution Barbecue Blak BBQ Seasoning per steak, followed by a thin even layer of Revolution Barbecue Texas Beef BBQ Rub.
    4. Season The Second Side: Flip the skirt steaks over and repeat the process with the remaining Revolution Barbecue Blak BBQ Seasoning and another thin even layer of Revolution Barbecue Texas Beef BBQ Rub.
    5. Rest The Seasoned Beef: Roll each skirt steak up, place them on a baking sheet, and refrigerate for 4 hours to allow the seasoning to work into the meat. If you are short on time, rest the seasoned steak for at least 1 hour.
    6. Set Up The Grill: Set up a Weber Smoky Mountain with charcoal and 4 large chunks of hickory. A Weber Smoky Mountain helps control flare-ups, but any charcoal grill will work.
    7. Grill The Carne Asada: Place the skirt steaks over the hot fire and cook for 2 1/2 minutes.
    8. Flip The Steaks: Flip the skirt steaks and cook for another 2 1/2 minutes.
    9. Continue Cooking: Continue flipping every 2 1/2 minutes until the steaks have cooked for a total of 10 minutes.
    10. Rest The Carne Asada: Remove the skirt steaks from the grill and let them rest for 10 minutes.
    11. Slice The Steak: Cut the skirt steaks into 6 inch pieces, then turn each piece as needed and slice thinly across the grain.
