Green Chile Chimichurri
Green chile gives this chimichurri an earthy, slightly sweet character that works naturally with fresh herbs and the tang of vinegar and lime. Diced green chiles bring soft pieces of pepper to each spoonful, while Revolution Barbecue Green Chile Seasoning carries that savory chile flavor throughout the sauce.
Parsley adds a clean herbal bite, while cilantro brings its distinctive citrusy freshness. Those flavors stay clear against the richness of the olive oil. Red onion and fresh garlic provide a sharper edge, and the vinegar and lime leave a bright finish. There is enough acidity to cut through a rich piece of meat while leaving room for the flavor of the grill.
What makes this sauce work is the combination of fresh flavor and a loose, chopped texture. You can see the herbs and vegetables, and you taste them individually as well as together. It has enough body to settle onto sliced steak or pork tenderloin, yet remains easy to spoon over chicken and vegetables.
The green chile is the focus here, supported by herbs that keep every bite fresh. That combination makes this chimichurri especially useful alongside grilled food, where savory pepper flavor and bright acidity complement a browned crust.

Texture matters as much as seasoning in this chimichurri. The herbs should be finely chopped but still recognizable, with small pieces of onion, garlic, and green chile distributed throughout. That gives the sauce some variation from bite to bite and helps it sit on the food instead of disappearing into a smooth coating.
Canned diced green chiles are already soft, so they need very little processing. The goal is to chop the fresh ingredients enough to make the sauce easy to spoon while retaining the character of the vegetables. Excessive blending would lose the texture that makes chimichurri so satisfying alongside grilled food. Draining the chiles also keeps their packing liquid from thinning the finished sauce.
Stirring the olive oil in by hand keeps the mixture loose and lets the chopped ingredients remain distinct. The oil carries the seasoning and coats the herbs, while the vinegar and lime provide the acidity needed to balance that richness.
Revolution Barbecue Green Chile Seasoning reinforces the flavor of the diced chiles throughout the sauce. Fresh garlic and red onion add bite, with green chile noticeable alongside the parsley and cilantro. The finished result should taste fresh, savory, and tangy, with enough chile flavor to complement browned meat or charred vegetables.

Ingredients
1 cup fresh Italian parsley leaves
1 cup fresh cilantro leaves
1 (4-ounce) can diced green chiles, drained
2 tablespoons red onion, roughly chopped
2 tablespoons red wine vinegar
1 tablespoon freshly squeezed lime juice
4 garlic cloves, peeled
1 1/2 teaspoons Revolution Barbecue Green Chile Seasoning
3/4 cup extra virgin olive oil
Directions
- Combine the Herbs and Chiles: Add the Italian parsley, cilantro, drained diced green chiles, red onion, red wine vinegar, lime juice, garlic, and Revolution Barbecue Green Chile Seasoning to a food processor.
- Pulse the Chimichurri: Pulse for 10 to 15 seconds, just until the herbs, chiles, onion, and garlic are finely chopped. Stop while the mixture is still visibly chunky. Do not process it into a smooth puree.
- Add the Olive Oil: Transfer the chopped mixture to a bowl and stir in the extra virgin olive oil until everything is evenly distributed. The finished chimichurri should remain loose and spoonable with visible herbs, chiles, onion, and garlic.
- Serve the Chimichurri: Spoon over grilled steak, chicken, pork, lamb, or vegetables.
