XXX Hot Street Corn (Esquites Inferno)
Share
You asked for heat, so we turned up the fire. This isn’t your classic backyard esquites—it’s a full-on flavor ambush. We’re talking 80 ounces of sweet corn, blistered over the flames, then drowned in creamy lime-spiked heat using our Fuego Vida XXX Hot Seasoning. The Carolina Reaper and Scorpion Pepper bring the pain in the best way possible, while a hit of fresh garlic and Cotija cheese balances the burn with bold, smoky richness. This is street corn off the cob—but from the gates of flavor hell.

This recipe transforms a family-sized 80-ounce bag of corn into a spicy, creamy inferno of street corn goodness. Grilled over open flames and tossed with our Fuego Vida XXX Hot Seasoning, Cotija, fresh garlic, and lime, it’s BBQ’s boldest sidekick.
Ingredients
- 80 ounces frozen sweet corn, thawed
- 8 tablespoons unsalted butter
- 6 cloves garlic, minced
- 2 tablespoons Fuego Vida XXX Hot Seasoning
- 1/2 cup mayonnaise
- 1/4 cup Mexican crema or sour cream
- Juice of 2 limes
- 1/2 cup Cotija cheese, crumbled (plus more for garnish)
- 1/4 cup red onion, diced
- 1/4 cup fresh cilantro, chopped
- Lime wedges, for serving
Directions
- Preheat your grill: Set your grill to medium-high heat (about 400°F). Place a deep disposable foil pan directly on the grates to preheat for 5 minutes.
- Char the corn: Add the unsalted butter to the hot pan and melt. Pour in the corn and let it cook, stirring occasionally, until the kernels start to brown and blister—about 12–15 minutes.
- Add the garlic and seasoning: Stir in the minced garlic and Fuego Vida seasoning. Let cook for 1–2 more minutes until the garlic is fragrant.
- Mix it up: Remove the pan from the grill and stir in the mayonnaise, crema, lime juice, red onion, cilantro, and Cotija cheese. Mix until creamy and fully combined.
- Serve hot: Garnish with extra Cotija and lime wedges. Serve right out of the pan or spoon into cups for easy street-style snacking.
