These party ribs are made to be passed around—no knives, no forks, just you, the smoker, and a pile of napkins. We rub them down with our North Carolina BBQ Rub after a coat of yellow mustard, then let the smoke do its work. Once tender, they take a dip in a buttery glaze made with brown sugar, honey, and a punchy mustard BBQ sauce that clings to every bite. If you grew up loving Carolina ‘cue, this one’s for you.

Ingredients
For the Ribs
- 2 racks pork baby back ribs, membrane removed and sliced into individual ribs
- 3 tablespoons yellow mustard
- 6 tablespoons Revolution Barbecue North Carolina BBQ Rub
For the Foil Pan Glaze
- 1 stick unsalted butter, sliced into tablespoon-sized pieces
- 1/4 cup light brown sugar
- 1/4 cup local honey
- 1/2 bottle of your favorite mustard-based BBQ sauce or homemade sauce below
Optional Homemade Mustard BBQ Sauce
- 1 cup yellow mustard
- 1/4 cup honey
- 1/4 cup apple cider vinegar
- 2 tablespoons ketchup
- 2 tablespoons brown sugar
- 2 teaspoons Worcestershire sauce
- 1/2 teaspoon black pepper
- 1 teaspoon salt
- 1 teaspoon Texas Pete’s hot sauce
- 1/2 teaspoon English mustard powder (We used Colman’s)
Directions
Prepare the ribs: Coat each rib with yellow mustard and season generously with the North Carolina BBQ Rub. Let the ribs sit at room temperature while you prepare the smoker.
Smoke the ribs: Preheat your smoker to 275°F using fruitwood or hickory. Place the ribs directly on the grate and smoke for about 2 hours, or until they reach an internal temperature of 165°F.
Wrap and glaze: Transfer the ribs to a large aluminum pan. Add the butter slices, brown sugar, honey, and mustard-based BBQ sauce (store-bought or homemade) over the ribs. Cover tightly with foil and return to the smoker.
Finish cooking: Smoke for another 30 to 45 minutes. Carefully open the foil and check the internal temperature—they’re done when they hit 200°F.
Rest and serve: Let the ribs rest uncovered in the pan for 10 minutes to reabsorb some of the sauce. Serve hot with extra mustard BBQ sauce on the side.
To make the optional sauce: Combine all ingredients in a small saucepan. Simmer over medium-low heat for 10 to 15 minutes, stirring occasionally, until slightly thickened. Let cool slightly before using.
