1 whole turkey (12-14 pounds), thawed and giblets removed

1 bottle Revolution Barbecue Bird Brine

¼ cup Revolution Barbecue Kansas City BBQ Rub

¼ cup melted unsalted butter or olive oil

Cherry or pecan wood for smoking

2 cups mayonnaise

½ cup apple cider vinegar

3 tablespoons chili garlic paste (Vietnamese Sambal Oelek)

2 teaspoons Worcestershire sauce

1 teaspoon celery seed

1 teaspoon freshly ground black pepper

1 teaspoon kosher salt

1 teaspoon red pepper flakes

1 teaspoon cayenne pepper (optional)

Directions
Prepare the Brine: Mix the contents of the Revolution Barbecue Bird Brine bottle with 1 gallon of filtered water in a large container. Shake vigorously until fully combined to ensure all the flavors are evenly distributed. Submerge the turkey in the brine, ensuring it's fully covered, and refrigerate for 1 hour per pound to lock in moisture and infuse flavor.
Prepare the Alabama White Sauce: In a sealable container like a mason jar, mix all the ingredients thoroughly until fully incorporated. Store in the refrigerator.
Prepare the Turkey for Smoking: After brining, remove the turkey from the solution, rinse it with cold water, and pat it dry with paper towels. Let it sit at room temperature for about 30 minutes while you preheat your smoker to 275°F.
Rub the turkey all over with melted butter or olive oil, then coat it generously with Revolution Barbecue’s Kansas City BBQ Rub, pressing it into the skin and any exposed meat.
Smoke the turkey: Place the turkey breast-side up on the smoker grates. Smoke over cherry or pecan wood until the internal temperature reaches 165°F in the breast and 175°F in the thickest part of the thigh, approximately 3-4 hours.
Sauce the Turkey: As soon as the turkey comes out of the smoker, generously coat it with the Alabama White Sauce, making sure every surface is covered. Tent it with foil and let the turkey rest for 20-30 minutes with the sauce soaking in, allowing the bold, tangy flavors to meld beautifully with the smoky richness of the meat
Carve the smoked turkey and serve with more of the Alabama White Sauce on the side, allowing guests to drizzle or dip as desired.
