These Savory Smoked 3-2-1 Pork Spareribs are a no-sauce-needed celebration of pure barbecue flavor. Adapted from my cookbook, Smokin’ Southern BBQ, this recipe highlights the natural taste of pork enhanced by the perfect seasoning. Using the 3-2-1 method—3 hours smoked, 2 hours wrapped in foil, and 1 final hour to finish—this technique delivers tender, smoky ribs every time. With the bold, savory notes of Revolution Barbecue All Purpose BBQ Rub, these ribs are all about balance and depth without relying on sweetness. If you’re a fan of true barbecue, this recipe will satisfy your every smoky craving!

Ingredients
-
1/3 cup dark brown sugar
-
4 tablespoons Revolution Barbecue All Purpose BBQ Rub
-
2 racks pork spareribs
-
1 cup apple juice
-
6 tablespoons butter, sliced into pats
-
4 tablespoons honey
Directions
Preheat your smoker to 225°F and add three chunks of cherry wood (or use 100% Cherry Wood pellets for a pellet smoker) for a smooth, subtle smokiness. In a small bowl, mix the dark brown sugar with Revolution Barbecue All Purpose BBQ Rub to create the seasoning blend. Pour the apple juice into a compression sprayer for consistent spritzing.
Remove the membrane from the back of the ribs, ensuring tender results. Liberally season both sides of the ribs with the rub mixture, starting on the bone side for even coverage.
Place the ribs on the smoker and let them smoke for 3 hours, spritzing with apple juice every hour to maintain moisture and flavor.
After 3 hours, transfer the ribs to a large sheet of heavy-duty foil. Add 3 pats of butter, 2 tablespoons of honey, and 2 tablespoons of apple juice to each rack. Tightly wrap the ribs in foil, ensuring no steam escapes, and return them to the smoker for 2 more hours.
Carefully remove the ribs from the foil using tongs and transfer them back to the smoker. Lightly dust them with the Revolution Barbecue All Purpose BBQ Rub. Add another chunk of cherry wood to the fire for a flavor boost. Smoke for 1 additional hour, or until the ribs reach 195°F to 205°F internal temperature.
Let the ribs rest for 20 minutes after smoking, then slice and serve. These savory ribs are full of flavor, with no need for sauce—just pure, smoky goodness.
