Ingredients
-
1 (5-bone) standing rib roast (about 12–14 pounds)
-
3 tablespoons olive oil
-
3 tablespoons Revolution Barbecue "I’m Your Huckleberry" Cowboy Rub
-
1 package onion soup mix
-
2 teaspoons fresh rosemary, finely chopped
-
2 teaspoons fresh thyme, finely chopped
-
4 cloves garlic, minced
-
1 cup low sodium beef stock
Directions
Prepare the Roast: Take the rib roast out of the refrigerator 2–3 hours before cooking to let it come to room temperature. Pat the roast dry with paper towels and rub it generously with olive oil.
Season Generously: In a small bowl, mix the onion soup mix, Revolution Barbecue I’m Your Huckleberry Cowboy Rub, rosemary, thyme, and garlic. Rub this mixture all over the roast, pressing it into the meat for a flavorful crust
Preheat the Pellet Grill: Set your pellet grill to 225°F, using hickory wood pellets for a smoky flavor. Allow the grill to preheat fully, following the manufacturer’s instructions.
Start Smoking: Place the roast directly on the grill grates and smoke for approximately 3–4 hours, or until the internal temperature reaches 110°F.
Collect the Drippings: Transfer the roast to a disposable aluminum pan. Add 1 cup of beef stock to the pan and return it to the grill. Continue cooking until the internal temperature reaches your desired doneness:
120°F for rare
130°F for medium-rare
140°F for mediumSear the Roast: Increase the grill temperature to 450°F and sear the roast for an additional 15–20 minutes to develop a rich crust.
Rest the Roast: Remove the roast from the grill and tent it loosely with aluminum foil. Let it rest for 30 minutes to allow the juices to redistribute.
Prepare the Au Jus: Pour the drippings from the pan into a small saucepan. Skim off excess fat, then simmer over medium heat. Adjust seasoning to taste, and keep warm for serving.
Slice and Serve: Carve the roast into thick slices and serve with the warm au jus. The smoky hickory flavor and bold seasoning from the I’m Your Huckleberry Cowboy Rub make this roast unforgettable.
