Directions
Prepare the Marinade: Start by blending the garlic, avocado oil, and Revolution Barbecue Texas Beef BBQ Rub into a coarse paste. Once the paste is ready, place the tri-tip roast in a sealable plastic bag. Scrape in the garlic paste, pressing out as much air as possible before sealing the bag tightly. Massage the paste thoroughly into the meat, ensuring an even coating. Allow the meat to rest at room temperature for at least one hour. If marinating for more than two hours, refrigerate the meat, but let it sit out for an hour before grilling to bring it back to room temperature.
Prepare the Grill: About an hour before serving, ignite a chimney’s worth of charcoal briquettes (around 50 pieces). Once the coals are covered in white ash, pour them into a mound on one side of the grill and place two chunks of oak wood on top for added flavor.
Sear the Tri-Tip: Sear the tri-tip fat side down directly over the flames with the grill lid off. This should take about three to four minutes. Cook the tri-tip to your desired doneness, checking the internal temperature every four to five minutes. Aim for 125°F for medium-rare (about 20-25 minutes) or 135°F for medium (about 25-30 minutes). Keep in mind that grilling times may vary depending on your equipment and fire temperature.
Rest and Serve: Once cooked, transfer the tri-tip to a platter and let it rest for 10 minutes to lock in the juices. Carve the roast into thin slices, about ¼ inch thick, cutting against the grain and angling the knife slightly for wider slices.
