Ingredients
blank
1 ½ pounds chicken thighs, boneless and skinless
2 tablespoons neutral oil (like canola or avocado oil)
1 tablespoon soy sauce
4 tablespoons Revolution Barbecue Kansas City BBQ Rub
blank
1 large ripe avocado, peeled and pitted
½ cup sour cream
Juice of 1 lime
¼ teaspoon garlic powder
¼ teaspoon kosher salt
blank
8 small tortillas, warmed
Optional toppings: shredded lettuce, diced tomatoes, fresh cilantro
Directions
Season the Chicken: In a large bowl, mix the oil, soy sauce, and Kansas City BBQ Rub into a marinade. Add the chicken thighs, ensuring they are fully coated. Let the chicken sit for 10–15 minutes to absorb the flavors.
Cook the Chicken: Preheat your air fryer to 375°F (190°C). Place the marinated chicken thighs in a single layer in the air fryer basket. Cook for 10–12 minutes, flipping halfway through, until the chicken reaches an internal temperature of 165°F (74°C) and is slightly crispy.
Make the Avocado Sour Cream Sauce: While the chicken cooks, combine the avocado, sour cream, lime juice, garlic powder, and salt in a food processor. Blend until smooth and creamy. Adjust seasoning to taste.
Assemble the Tacos: Slice the cooked chicken thighs into strips. Fill each tortilla with the chicken and top with a dollop of the avocado sour cream sauce. Add your favorite toppings, like shredded lettuce, diced tomatoes, or fresh cilantro.
Serve and Enjoy: Serve immediately for a warm, flavorful indoor BBQ experience that’s sure to impress!
